A semi-retired teacher had food for thought when he visited Sweden and tasted some delicious local dishes.

Leighton’s John Duxbury was so impressed with the delicacies that he decided to set up a website dedicated to the Swedish grub.

John still teaches physics part-time at Vandyke Upper School, and before he semi-retired he organised a programme for Swedish students to study in the town.

John explained: “I’ve spent the last 15 years going back and forth to Sweden. On my visits I was so impressed by Swedish food that I wanted to bring it to a larger audience.

“I was also looking for a new challenge now that I have a bit more free time after teaching physics for over 40 years. Creating a new website with free recipes seemed like a challenge I would enjoy.

“Along the way I have been trying to learn Swedish so that I can read recipes in Swedish cookery books. I have also had the chance of working with some fantastic professional cookery writers.”

The site has got off a good start with people from more than 30 countries visiting www.swedishfood.com during the first week.

John added: “I am delighted to see people around the world visiting the site. It makes my all my work setting up the site seem worthwhile.”
